The old Jesuit estate provides the visitor with a complete experience of relaxation and, at the same time, of daily life in a productive field. From the stages of growth of the dairy cows (with newborn calves in their stone corrals in front of the hotel entrance), in charge of the loquacious caretaker Rafael, to witnessing the milking process or the manufacture of tasty cheeses.

It was the Jesuits who, among the vast legacy of their brief presence in the area, established the corresponding Manchego-style cheese factory, a tradition brought from their native Spain, with the twist that its production was based on cow's milk and not sheep's milk, as is the authentic Iberian cheese.

In addition, at the rural ranch you can take horseback rides in different options according to the demands and duration desired by the rider.

@tripticity_ was fortunate to be guided by Martín, who assigned her a gallant brown horse named Granizado. All the way to the foot of Pelao Hill, Tigre, the farm dog, along with his friends, escorted the inexperienced riders.

In the nearby corrals, llamas graze and entertain guests and visitors.

Although it is possible to make a tour of a couple of hours, the recommendation is to stay a couple of nights in the exclusive hotel of the ranch to disconnect thanks to its stupendous sunsets, as well as with the gastronomic offer in charge of the chef Luis García, in which the cheeses of the own production become the protagonists of the courses, whether sweet or savory. The burnt cheese to start is a must, as well as the queseada in torrontés wine, simply delicious!

On cold days, it is worth enjoying the warmth of the fireplace in the living room.

In all its rooms, including the galleries that escort the small inner courtyard, local handicrafts stand out, whether saddlebags, blankets or tapestries, all in bright colors, as well as woodwork with leather mats. The roofs are typical of the area, made with reeds that are tied to the strong wooden straps by leather ties.

The rooms are well heated, comfortable and complete, with a warm decoration that enhances the nobility of the northern fabrics and materials. The detail of the embroidered bed linen is appreciated by @tripticity_

In addition to all that experience, the estancia has a small area where antique objects are exhibited as a museum, as well as the respective store to buy the tasty "M" cheeses in their different variants: natural, with paprika, with black pepper or with chili. At the farewell @tripticity_  received a new pleasant surprise, as there was no criollo cheese left, the one that is consumed without seasoning. However, the chef just entered the store and rushed to get the precious souvenir of the visit, in order to try to replicate the burnt version back home.
